Now that I'm into Day 9, it was about time I cooked up some items that I could have amazing lunches without scrambling each day. Yesterday I cooked up my chicken breasts, which had been marinating overnight in lemons, garlic, salt, pepper and a little red onion. Loaded them on some super healthy canola oil/olive oil combo on a flat cookie sheet.
They came out DELICIOUS and juicy. I didn't dry any of them out. I believe having the lemons in there help keep that moisture in.
I had one on a huge salad, topped with a few cucumbers and a mix of vinegar, lemon juice from my cooked lemons and some extra virgin olive oil. It's amazing how good things taste now. My taste buds are on high alert these days. Love that. The rest when into the fridge to cool down, then into the freezer for quick lunch options during the next couple of weeks.
Tonight I will marinate lean pork in some onions, garlic and green peppers, so I can cook them the same way. Small portions of super lean pork will help me keep the variety alive! I can match that up with some brown rice, or multi grain pasta with lots of veggies. Once the pork is all cooked, I can freeze it for small meals through the next few weeks. AWESOME.
Marinating is highly under-rated. It makes such a difference with cooking.
Again, today is Day 9. My husband still has to help me with a couple of my measurements. I need him to measure the same spots he measured last time and I can't remember where my waist, diaphragm and stomach are "officially" when you are measuring. It's hard to get a good view, when you have double d's in the way of your view........if you know what I mean. Cup size doesn't go down, just the inches around my back, so I'm still sporting the Double D's!
It's been such a change for this family. When Mommy's happy, it makes for much happier kids. And as my husband is finding out SLOWLY, Happy WIFE, Happy LIFE. Sleeping at night is getting much better, I haven't had a headache in about 6 days. Now, before I started this, I had a headache at least ONCE a DAY. It was from stress, aggravation, not eating properly, etc. Since the first two days of "hell" when I started (again, don't start this when you've got your period, just plain stupid on my part), I haven't had a headache.
Let me emphasize this again, with Cookie Monster mentality (because we just watched Sesame Street and Cookie Monster is awesome): ME HAD HEADACHES EVERY DAY FOR 3 YEARS. ME NOT HAD HEADACHE FOR 7 STRAIGHT DAYS. ME LIKEY.
I didn't expect these kinds of changes to happen so quickly, but when you're eating the right things and putting good things into your body, your body THANKS YOU in amazing ways. I'm actually looking forward to adding some exercise into the mix. First, I have to get my chronic shoulder and back pain to ease up. That will come with a bit more core muscle strengthening on my part. When you're five feet three inches and have Double D's riding low, it is harsh on your neck, shoulders and back.......so stick with me, while I work through that aspect, too!
Needless to say, it's been a phenomenal 9 days. The healthy life is really amazing. Thanks for coming along on my journey. We've got plenty of days left!!!!
